Sometimes the Best Things Come Out of the Hardest of Times!

For me, the last seven years have been dedicated to restoring my health, transforming my life, healing my marriage, and building my online Functional Health consulting and Transformational Coaching practice. This was a monumental undertaking and left me with little to no energy, desire, or wherewithal for much else — including celebrating holidays.

I used to be very into Christmas. My whole family was. Gifts. Frequent gatherings. Driving here and there. Lots of food. The whole nine yards! I would also send out holiday cards with a yearly update report on the happenings in our life over that past year. But when my life hit the skids in 2012, this all came to a dead stop.


Back in Action!

This year was the first year since then that I had both the energy and desire to get back into the holiday spirit. In celebration of this, I decided to send out a letter providing a summary of our lives over the last seven years, a photo collage card, and a large jar of the homemade trail mix blend I had recently made up during an evening of kitchen shenanigans. I sent out 35 packages!

Before beginning this project, I thought it would be no big deal. It turned out to be quite the undertaking. It was well worth though because it was a big success with all — which made me happy. People are still raving about this trail mix, and many have requested the recipe — which served as the inspiration for this post.

So, here it is! It is super simple to make, nutrient-dense, and packed with flavor. I hope you love it as much as we and everyone else did.

How To Make It!

Note: I don't give quantities. Use your best judgment and go with what looks and tastes the best to you. This is how I usually role in the kitchen.

Organic, raw, and unsalted pumpkin seeds tossed in unflavored coconut oil, cinnamon, and a small amount of coconut sugar then roasted in the oven at 350 degrees until lightly brown.

At this point, add raw, organic cocoa nibs and dried coconut flakes and roast for another few minutes only - until everything is light golden brown.

Set outside to cool and then add organic, dried and unsweetened tart Montmorency cherries and dried, organic cranberries.
